This recipe is from the 1973 Pillsbury Bake-off contest and is my favorite version of banana bread. I usually make a powdered sugar glaze for the top, which makes it extra special.
Ingredients:
1 1/4 cups all-purpose white flour
1/2 cup whole wheat flour
1 cup sugar
1 teaspoon baking soda
1 teaspoon salt
1 1/2 cups mashed ripe bananas (3 medium)
1/4 cup margarine or 1/4 cup butter, softened
2 tablespoons orange juice
1/4 teaspoon lemon juice, if desired
1 egg
1/2 cup raisins
Directions:
1. Heat oven to 350.
2. Grease and flour bottom only of 9X5 or 8X4 inch loaf pan.
3. In large bowl, combine all ingredients except raisins; beat 3 minutes at medium speed.
4. Fold in raisins.
5. Pour batter into greased and floured pan.
6. Bake at 350 for 55 to 65 minutes or until toothpick inserted in center comes out clean.
7. Cool 10 minutes; remove from pan.
8. Cool on wire rack.
9. Wrap tightly and store in refrigerator.
