Fattoush Salad With Chick Peas And Feta

Fattoush means moistened bread', it's of Syrian or Lebanese origin, I found this great looking salad in the Fresh magazine from my grocery. Chickpeas have been added for protein.
Ingredients:
salad
2 (8 inch) pita breads
6 c chopped romaine lettuce
1 english cucumber, peeled and diced
1/2 red onion. diced
2 large tomatoes, diced
1 (15 oz) can chickpeas, drained and rinsed
1/4 c mimced fresh parsley
1/4 c slivered fresh mint
1/2 c crumbled feta cheese(optional)
dressing
1/4 c lemon juice
1/4 c olive oil
1 garlic clove, minced
1 tsp cumin
1/4 tsp salt
Directions:
1. Preheat oven to 350F
2. Separate each pita into two layers and cut into 2 inch strips
3. Place pita strips on a baking sheet and bake for 8 to 10 minutes or until lightly browned
4. Break pita into bite size pieces after baking
5. While pita is baking prepare the vegetables
6. In a large bowl. combine lettuce, cucumber, onion, tomato, chickpeas, parsley and mint and chill
7. Dressing
8. Just before serving, prepare the dressing
9. In a small bowl whisk together lemon juice, olive oil, garlic, cumin and salt
10. Pour dressing over salad and toss
11. Gently mix in toasted pita and feta cheese, if using and serve immediately
