Fattigmans Bakkelse (Norwegian Christmas Cookies)

Wonderful fried treat, great for spending family time in the kitchen, as several helping hands are better than just yours.
Ingredients:
6 egg yolks
3/4 cup sugar
1/2 teaspoon salt
2 -3 teaspoons cognac
1/2 cup heavy cream
2 1/2 cups flour, plus additional flour for working
1 teaspoon cardamom
vegetable oil (for frying)
powdered sugar
Directions:
1. Beat egg yolks, sugar and salt in a large bowl until thickened.
2. Beat in cognac & heavy cream.
3. Stir in flour & cardamom until dough forms. Knead dough on floured work surface. Cover & chill 4-8 hours.
4. Heat vegetable oil in deep fryer to 365 degrees. Roll dough out on floured work surface. Do this a little at a time and VERY thinly.
5. Cut dough into strips, then into diamonds 2x4 .
6. Cut vertical slit in middle of each diamond and thread one end through slit.
7. Fry cookies a few at a time. Flip as they rise to surface and cook until golden and lightly puffed.
8. Drain on paper towels & let cool. Sprinkle with powdered sugar & serve.
