Fat Free Banana Crunch Muffins

A delicious fat free banana muffin, from Good Housekeeping. Delicious and fat free - sounds too good to be true, but it is!
Ingredients:
1/2 cup whole wheat flour
1/2 cup white flour
1/2 cup grape-nuts cereal
1/2 cup sugar
1/2 teaspoon baking soda
1/2 teaspoon baking powder
1/4 teaspoon salt
1 teaspoon vanilla
1/4 cup egg substitute
2 mashed bananas
Directions:
1. In a small bowl mix all dry ingredients together.
2. In a larger bowl mix all wet ingredients together.
3. Add dry ingrediants to wet ingredients.
4. Mix just until combined; do not overmix.
5. Bake for 20-25 minutes (or until toothpick comes out clean) in a 350 degree oven.
