Fat-free Banana Bread

OK, this is fat free until you add the walnuts! I'm always amazed at how moist this snack bread is with no fat added. It is also very good using half whole wheat flour.
Ingredients:
2 c. flour
1 c. sugar
1 tsp. soda
1 tsp. baking powder
1 tsp. salt
2 eggs beaten
3 mashed bananas
3/4 c. apple sauce
3 tbsp. skim milk
1 tsp. pure vanilla
(1 cup chopped walnuts, optional)
Directions:
1. Combine dry ingredients and set aside.
2. Combine wet ingredients in mixing bowl.
3. Add dry ingredients to the wet ingredients and mix to combine.
4. Pour into loaf pan.
5. Bake at 350 for one hour.
6. Note: This is also very good using 1 cup each of whole wheat and white flour.
7. Note: Other nice additions are other kinds of nuts, raisins, dates, etc. I divide the batter in half and put chocolate chips in one half (for my daughters) and walnuts or pecans in the other (for Grandma). I then put in two loaf pans and only bake for 40 minutes.
