My daughter said I have to share this. I wanted to make scones but authentic scones don't seem to be sweet enough for me, so I came up with this method. While not a true scone I suppose, it's very close and really great for a brunch or snack. Read more . So easy and so cheap, it's a great pantry snack.
Ingredients:
1 box jiffy raspberry muffin mix
1/2 stick softened butter
1/4 cup flour
2 t. milk, half and half or cream
2-3 t. dried mixed berries
2 t chopped pecans (optional)
egg wash (optional)
glaze
2 t. powdered sugar
liquid- milk, water, or juice
Directions:
1. Preheat oven to 375 or 400 degrees
2. Place muffin mix in medium bowl, add flour and butter
3. Mix well with fork, smashing first, then mixing
4. Add berries (and pecans if using) and stir to combine
5. Add liquid, 1 T. at a time, no more than 2 T. and stir till blended
6. Sprinkle flour over work surface
7. Drop dough onto flour, lift and spread flour and turn dough over
8. Lightly shape the dough into a ball and then press into a rectangle about 6 x 4 inches
9. Cut rectangle in half lengthwise
10. Cut each smaller rectangle into 6 triangles
11. Remove each triangle with a spatula.
12. Using your fingers, round the edges of each piece making it scone-like
13. If you'd like to brush with an egg wash, do it now
14. Bake on parchment paper 10 minutes or cooking stone for about 12 mins or so
15. Cool before removing from pan
16. Make glaze (powdered sugar and whatever liquid you want to use) and drizzle over scones
17. Of course there are endless possibilities with all the muffin mixes. Oven temps vary, so bake accordingly. Cinnamon apple muffin mix and cranberries is good, with and without pecans. I'm sure the banana nut, maybe with chocolate chips, would be just as good. I use Jiffy mixes but of course there are other brands with lemon poppyseed and chocolate chip, etc.
