Farro, sometimes known a emmer wheat is an ancient grain popular in Europe. It's texture similar to barley, but farro has a pleasing chewy texture. It may be soaked overnight if desired. I use a 1:3 ratio of farro to liquid. Read more . It is also a complex carbohydrate and very nutritious. Available at health food stores, gourmet grocers.
Ingredients:
1 cup of farro
3 cups liquid of choice ( water or broth )
1 box mushrooms sliced
1 onion diced
1 clove of garlic
olive oil
salt and pepper to taste
optional: other cooked vegetables, fresh herbs, grated cheese )
Directions:
1. Bring water and farro to a boil
2. Cover and cook till al dente ( 45-60 minutes) depends whether you chose to soak the farro in water over night
3. Drain off any excess liquid
4. While farro is cooking, saute mushrooms, onion and garlic in olive oil
5. When farro is cooked and dained add the mushroom mixture and season to taste
