Farmer's Pie Filling (Vegan)

Filling for the Farmer's Pie from Green Cuisine Cookbook 2006.
Ingredients:
250 g seitan
1 1/2 potatoes, peeled and diced (1.5 large, or 3 medium)
3/4 cup carrot, peeled and diced
1/8 cup sunflower oil
2 cups onions, chopped
2 cups mushrooms, sliced
1/2 tsp rosemary
3/4 cp water
1 1/2 tsp salt
1 tsp yeast
1/2 tsp thyme
1/2 tsp black pepper
1 garlic clove, minced
3 tbsp sunflower oil
6 tbsp white flour
Directions:
1. Steam or boil the potatoes and carrots until soft.
2. Saute the onions, mushrooms and rosemary for 10 minutes.
3. Add the water and seasonings and bring to a boil.
4. Mix the oil and flour together to form a paste (known as a 'roux').
5. Using a whisk, add roux to the sauce and keep whisking vigorously until the sauce thickens.
6. Combine the seitan, potatoes and carrots, and the sauce together.
7. Put filling into 10 x10 pie crust and bake for 40 min at 400 Fahrenheit for 10 minutes (or as directed for pastry).
