Farmer's Market Potato Salad

A new twist on potato salad, using all those lovely fresh veggies and homemade yummies from the local Farmer's Market.
Ingredients:
1 lb yukon gold potato, cubed and steamed
1 cup celery, diced
1 cup other raw fresh vegetables (green peas, green beans, etc.)
2 bunches greens, chopped (spinach, mustard, arugula, or mixed)
3 -4 green onions, sliced
1 garlic clove, mashed
3 slices bacon (optional)
2 tablespoons herb-flavored olive oil
2 tablespoons champagne vinegar
1 tablespoon whole grain mustard
salt and pepper
Directions:
1. Add celery (and any other raw veggies you wish) to potatoes and stir gently.
2. Brown bacon and break into pieces, leaving it in the pan.
3. Add greens, onions, garlic, and herbed olive oil to pan.
4. Saute until greens are wilted.
5. Add vinegar and mustard to greens mix.
6. Add saute mix to potatoes.
7. Add salt and pepper to taste.
8. You may adjust the vinegar, mustard, oil more or less to your .liking.
