Nothing can beat greens from the farmers market — they're so beautiful, delicate, and fresh, you simply can't help buying some.
Ingredients:
2 tablespoons extra-virgin olive oil
1 1/2 tablespoons finely chopped shallot
2 teaspoons fresh lemon juice
1/2 teaspoon salt
1/2 teaspoon coarsely ground black pepper
1/2 lb summer lettuces such as baby red oak, bibb, and baby romaine (12 cups total)
Directions:
1. Whisk together oil, shallot, lemon juice, salt, and pepper in a large serving bowl.
2. Just before serving, add lettuces to dressing and toss to coat.
