Ingredients:
6 slices bacon
1/4 cup chopped green onion
1/4 cup chopped green pepper
1 tablespoon flour
1 tablespoon sugar
1/2 teaspoon celery seeds
1/4 teaspoon salt
dash pepper
1/2 cup water
1/4 cup vinegar
2 cups cubed cooked potatoes
8(oz) fully cooked smoked bratwurst,cut in 1/2 pieces(about 2 cups)
1/4 cup chopped pimiento
2 tablespoons butter
8 eggs,beaten
1/3 cup milk
1/2 teaspoon salt
dash pepper
Directions:
1. In large skillet cook bacon until crisp.
2. Remove bacon and drain on paper towel.
3. Reserve 3 Tablespoons drippings in skillet.
4. Crumble bacon and set aside.
5. Cook the green onion,and green pepper in reserved dripping until tender.
6. Blend in flour,sugar,celery seeds,1/4 teaspoon salt and dash of pepper.
7. Stir in water and vinegar.
8. Stir constantly over medium-high heat until mixture thickens and bubbles.
9. Fold in potatoes,bratwurst and pimiento.
10. Heat until bubbly.
11. Reduce heat and keep hot while scrambling eggs.
12. In a large skillet,melt the 2 tablespoons of butter.
13. Mix eggs with milk,1/2 teaspoon salt and dash of pepper.
14. Add to melted butter in skillet and cook thoughout but still glossy and moist.
15. Remove from skillet and place on a heated platter.
16. Top with hot potato mixture.
17. Garnish with crumbled bacon.
18. Makes 6 to 8 servings
