Farfalle With Lamb Sausage, Feta & Mint

This is rich and delicious, but not too heavy. My whole family loves it! I use some pureed carrots to sweeten the sauce a bit. If it suits your taste and you don't have those available, you can put a teaspoon or two of sugar in if you like. If you can't find lamb sausage, you can use ground lamb mixed with lamb sausage seasoning (typically fennel, mint, garlic, salt and pepper).
Ingredients:
1 yellow onion, chopped
2 garlic cloves, chopped
2 tablespoons olive oil
1 lb lamb sausage, cut into 1-inch pieces
1 (28 ounce) can diced tomatoes
1 (14 ounce) can tomato sauce
sea salt, to taste
ground black pepper, to taste
1 lb dried farfalle pasta
3 tablespoons feta cheese, crumbled
2 tablespoons fresh mint, chopped
Directions:
1. In a deep skillet, saute onion and garlic in the olive oil. Add sausage pieces and brown them, breaking up the pieces slightly.
2. Add the tomatoes and tomato sauce and simmer on very low heat for 1 hour, stirring occasionally. Season with salt and pepper. Turn off the heat and add the mint and feta cheese, stirring just until mixed.
3. Cook pasta in boiling salted water. Drain thoroughly, and then toss with the sauce. Add extra mint and feta for garnish if desired.
