Fantastic Apricot Muffins

These muffins ar so fruity and moist. Wonderful for breakfast with tea or coffee, for brunch with an omelet, or so good as an afternoon snack.
Ingredients:
1 cup chopped dried apricot
1 cup boiling water
1 cup sugar
1/2 cup butter or 1/2 cup margarine, softened
sour cream (1 cup)
2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1 tablespoon grated orange rind
1/2 cup chopped nuts
Directions:
1. Soak apricots in boiling water for 5 minutes.
2. In a large mixing bowl, cream sugar and butter until fluffy.
3. Add sour cream; mix well.
4. Combine dry ingredients; stir into creamed mixture just until moistened.
5. Drain apricots, discarding liquid.
6. Fold apricots, orange peel and nuts into batter.
7. Fill greased or paper-lined muffin tins 3/4 full.
8. Bake at 400 degrees for 18-20 minutes or until muffins test done.
9. Cool 10 minutes before removing to a wire rack.
