Fancy-Pants Bangers 'N' Mash

Fancy-Pants Bangers 'n' Mash
Ingredients:
2 tbsp olive oil
8 links sausages, bangers if possible
2 lbs red potatoes, cubed
2 medium red onions, thinly sliced
1 tbsp fresh thyme leaves
2 cloves garlic, chopped
1/2 cup dry red wine
1 1/2 cup chicken stock
2 tbsp butter
2 tbsp cream cheese
3 tbsp chives, chopped
1/2 cup milk
1/4 cup parsley, chopped
1/2 lemon, juiced
Directions:
1. Heat a large nonstick skillet over medium-high heat with oil. Add bangers and brown on all sides, 3-4 minutes.
2. Meanwhile, cover the potatoes in water in a medium saucepan. Bring water to boil, salt it and cook until the potatoes are tender, about 10 minutes.
3. Remove banger to a plate and reserve. Dran half the fat from the skillet and return to heat. Add onions, thyme, garlic and salt and pepper to taste. Cook, stirring frequently for 5 minutues, or until browned. Add the wine and stock and bring to a simmer. Add bangers and cook until sauce is reduced by half, about 5 minutes.
4. Drain potatoes and return to pan and put on stive top to dry potatoes. Add butter, cream, chives and milk to potatoes and mash. Season with salt and pepper.
5. Finsih bangers with parsley and lemon juice. To serve divide the mash among 4 bowls. Top with bangers and sauce.
