Fancy Nisher's Roasted Beet Salad With Goat Cheese...

I love roasted beets, and this goat cheese dressing makes things CRAZY good!
Ingredients:
4 ounces fresh goat cheese - set out at room temperature to soften
1/3 cup buttermilk
juice of 1/2 lemon
1 tablespoon champagne vinegar
2 tablespoons flavorful olive oil
2 tablespoons water
pure spray oil - olive or whatever
8 medium beets - red and golden, if available
2 heads bibb lettuce (coarsely torn)
1/2 cup pistachios
salt and pepper to taste
Directions:
1. Heat oven to 350
2. Peel the beets, place on foil, spray with oil, salt lightly. Wrap tightly and roast for about 45 minutes, until fork tender.
3. While the beets are roasting, make the dressing:
4. Place the goat cheese in a bowl, mash with a fork
5. Add buttermilk and vinegar, whisk together
6. Whisk in enough oil and water to bring to the consistency of a thick dressing
7. Add salt and pepper to taste
8. Remove beets from oven, slice about 1/4 thick
9. Arrange lettuce on a platter, place beet slices on top, sprinkle pistachios over and drizzle with dressing
10. Serve and enjoy!
