This is my approximation of the roasted carrots that were served as part of the meal at Toronto's Famous People Players. The meals there are cooked and served by individuals with physical and mental disabilities - and if you didn't know ahead of time, you could never tell. Read more . There's enough liquid in this recipe that it forms a wonderful sauce... perfect for pouring over a salmon steak and rice for dinner.
Ingredients:
4 cloves garlic, minced
2 tbsp honey
1/2 can (6oz) frozen orange juice concentrate, thawed
1/3 cup chicken (or vegetable, for vegetarians) broth
1 red onion, minced
1/2 tbsp dried basil
1/2 tsp salt (optional)
1/2 tsp tabasco
1 tbsp paprika
1 lb carrots, peeled and cut into sticks
Directions:
1. Preheat the oven to 400F. Line a deep casserole with lightly greased foil (for easy cleanup).
2. In a large bowl, combine all the ingredients, tossing the carrots to coat them well.
3. Bake for about 25 minutes, or until tender and the glaze is reduced.
