My wife introduced me to potato soup. I know it sounds strange but it was something my family never did. It is simple, hearty, and a staple on a winter night. It has morphed over the years into this recipe. After all did you ever have one of those. This is an amazing dish, simple fast and if you throw in some bread you can feed a crowed on the cheap. With adding the hot dogs and cheese your crowed will think that you are one smart cookie!
Ingredients:
potatoes two per person plus one for the pot (8-10 medium to large)
1 onion (grated medium)
1 cup milk (i use skim)
1/4 cup dice or shredded carrots
1/2 cup diced celery including leaves
1/2 lb velveeta cheese (cubed)
1-2 packages hot dogs (your choice) cut into small pieces
1/4 - 1/2 cup instant potato flakes
enough water to cover potatoes
salt (to taste)
pepper (to taste)
Directions:
1. In a large kettle - If you are like me the larger the kettle the more you make. Good news is that this will freeze very well and makes a great left over.
2. Peel your potatoes and cut into 1” or larger pieces.
3. Add carrots, grated onion, and celery
4. Cover with enough water to cook
5. After potatoes are done add cheese, milk, and hot dogs
6. Stir frequently until cheese is melted
7. If soup is too thin add enough potato flakes to thicken to desired constancy
8. If the chunks of potato are too big use a potato masher to break them up.
9. Total cooking time should be about an hour but it can simmer on hold for as long as you need.
