Internet recipe (can't remember which site or blog) Cheesy lasagna rolls with a tomato sauce and cheese topping.. Super easy and inexpensive way to feed a hungry family. Lots of options for variations like adding veggies like onions, bell peppers, mushrooms or ground beef or Italian sausage... use your imagination!
Ingredients:
8 ounces lasagna noodles
1 (66 ounce) jar spaghetti sauce, any flavor
1 teaspoon fresh basil
1 teaspoon oregano
1/8 cup sugar
1/8 teaspoon garlic salt
1 lb ricotta cheese
4 cups mozzarella cheese (shredded, reserve half for topping)
3/4 cup parmesan cheese, grated, reserve 1/4 cup for topping
1 egg (beaten)
1/2 cup italian seasoned breadcrumbs
1/8 cup chopped fresh parsley or 1 teaspoon dried parsley
Directions:
1. Cook lasagna noodles, then drain, rinse & lay flat on towel to dry.
2. Stir together sauce ingredients and set aside.
3. Spoon 1/4 sauce on bottom of 9x13 baking pan.
4. Cut lasagna noodles in half to make 2 four inch pieces of each.
5. Combine cheese mixture in medium size bowl and mix together well.
6. Spoon onto one end of noodle, 1 heaping tbsp of cheese mixture.
7. Roll up, starting at cheese end, and place on sauce in pan, seam side down.
8. Repeat until you are out of cheese.
9. Pour remaining sauce evenly over the manicotti.
10. Top with remaining 1/4 cup parmesan and the remaining mozzarella.
11. Cover with foil.
12. May store in refrigerator until baking time.
13. Bake, with foil on for 20 minutes, at 375 degrees.
14. Remove foil and bake for another 15 minutes.
15. Bake an additional 5 minutes with foil on if it was made ahead and stored in refrigerator.
