A delicious twist on the standard waldorf, the pears and dates add a nice touch and make it more special.
Ingredients:
2 cups of cubed unpeeled red apples
2 cups of cubed unpeeled pears
1/4 cup of chopped dates
1/4 cup of diced celery
1/4 cup of chopped walnuts
2 tablespoons of lemon juice
2 banana peeled and sliced
1/3 to 1/2 cup of light mayonnaise
3 tablespoons of honey
1/2 teaspoon of grated lemon rind
1/2 teaspoon of all spice
Directions:
1. In a large bowl, combine apples, pears, dates, celery, bananas. Add lemon juice and toss very lightly to keep the fruit from browning.
2. Mix the mayo, honey, lemon peel and allspice. Add to the fruit.
3. Toss very lightly. Sprinkle with chopped nuts. Refrigerate.
4. Serve in lettuce cups or plain.
