Ingredients:
3 cups chick peas, cooked (2 -15oz cans)
3 eggs
1/2 cup chopped yellow onion
1 clove garlic, minced
1 1/2 cups bulgur, cooked (3/4 cup dry measurement)
2 tbls fresh parsley, chopped
2 tbls fresh cilantro, chopped
1 tsp salt
1 1/2 tsp red pepper, dried
1 tsp cumin
1/4 tsp cayenne pepper
1 tbls coconut oil
Directions:
1. Roughly chop onion and drain chickpeas. In a blender, process chickpeas (if using canned, be sure to drain), onion, garlic and egg whites.
2. In medium mixing bowl, combine chickpea mixture and all remaining ingredients. Mix thoroughly.
3. Form mixture into 6-8 balls and refrigerate for 30 mins.
4. Heat coconut oil in frying pan or skillet over medium-high heat. Add 3-4 balls and flatten with the back of a spatuala to form round patties. Cook 4-5 minutes on each side flipping once. Repeat with remaining mixture.
