A simple but flavorful lentil soup with garlic, bay leaves and tangy balsamic vinegar.
Ingredients:
2 c. lentils
8 c. water
1 small onion, cut into thin slices/strips
4 cloves garlic, minced
4 bay leaves
3/8 c. balsamic vinegar
powdered vegetable broth (4 c. worth)
olive oil
salt
pepper
Directions:
1. Generously coat bottom of pot with olive oil and saute onions and garlic.
2. Add water, lentils, and bay leaves. Bring to a boil then reduce heat to simmer for 40 minutes.
3. Add vinegar, instant broth, salt and pepper to taste.
4. Continue to simmer until lentils are very tender, about 20 minutes.
