Fajiladas (Fajita Enchiladas)

This is one of my family favorites. It's not difficult to make and tastes GREAT!
Ingredients:
1 can ranch style black beans
1/2 teaspoon fajita seasoning mix
5 tablespoons vegetable oil for frying tortillas
12 flour tortillas
1/2 lb cooked chorizo sausage
1/2 lb fajita chicken strips
1 red bell pepper, cut into strips
4 ounces cheddar cheese
1 white onion, cut into strips
4 ounces cheddar cheese
1 cup sour cream
2 tablespoons chopped cilantro
Directions:
1. To make bean puree:.
2. In food processor or blender, blend black beans and fajita seasoning. Cook bean puree for 3 minutes, stirring constantly. Taste and add more fajita seasoning if necessary. (Add more water if puree is too thick; it should be thin enough to pour.).
3. To fry tortillas:.
4. Pour oil in shallow pan to 1/4 inch depth. Place over medium heat. Fry each tortilla briefly on both sides. Drain well.
5. To assemble:.
6. While tortilla is still warm, spoon in some chorizo, chicken, cheese, onion, and pepper and roll up. Place tortilla in baking dish seam side down and repeat until all ingredients are used. Pour puree over top, and let sit for about 5 minutes for the puree to soak into tortillas.
7. To serve:.
8. Arrange 3 filled tortillas on each plate. Spoon generous amount of bean puree over each. Garnish with sour cream, cheese and cilantro.
