Faiths Leftover Beef Stew

Just 2 of us so always looking for ways to use the leftover cooked meat. Made this today with leftover London Broil and was fabulous !
Ingredients:
2 tbsp. oil
1 c. baby carrots cut into 1/4's
2 medium celery stalks sliced
32 oz. carton beef broth
1 pkt. dry onion soup mix
2 c. water
1 tsp. minced garlic
1/2 tsp. pepper
1-2 whole bay leaves
1 large idaho potato peeled and diced
1 14oz. can zucchini in tomato sauce (or 8 oz. can tom. sauce)
1/2 to 3/4 lb. cooked beef steak/roast cubed
2 tbsp. corn starch
Directions:
1. -saute carrots and celery in oil in stockpot 5 min.'s
2. -add broth, onion soup mix, water, garlic, pepper and bay leaf. Bring to boil, turn to low and cover, simmer 10 min.'s
3. -Add diced potatoes, beef, and zucchini in sauce, bring back to boil and turn to low, cover and simmer 15 min's. or until potatoes are tender.
4. -mix together corn starch and 1/4 C. water. Add to soup and stir until thickened.
