A delicious, hearty puree of Tuscan (dinosaur) kale, potato, tomato and garlic - seasoned with pepper and studded with kidney beans. A perfect winter warmer. Makes 4 main course servings.
Ingredients:
1 baking potato, diced
1 large tomato, chopped
1/2 cup onion, minced
1 lb tuscan kale, chopped
8 cloves garlic, cut in half
1/2 tbsp coarse sea salt
1/4 tsp crushed red pepper flakes
1/4 tsp ground black pepper
6 1/2 cups water
19 oz cooked kidney beans, drained and rinsed
Directions:
1. Combine all ingredients in a large soup pot.
2. Bring to a boil, then reduce heat and simmer 1 1/4 hours.
3. Puree smooth in a blender or food processor, then return to pot and stir in kidney beans.
4. Keep warm until redy to serve.
