This is an amazing platter of tapas with a wow factor that you can really put on the table in 10 minutes. Believe me it is the joy of any party and the best part is you don't go through hours of endless cooking :)
Ingredients:
12 quail eggs, boiled and shelled
12 cheery tomatoes
5 oz paprika spanish salami
5 oz pepper spanish salami
5 oz prosciutto
7 oz cured manchego cheese
3 oz marinated green olives (recipe follows or just buy your favorite)
Directions:
1. The day before prepare the marinade for the olives.
2. For 1 and half cups of pitted green olives add: 1 tsp mixed herbs, 2 tbsp olive oil, 2 tbsp roasted pepper, 1 clove of garlic cut in half. Store in an air tight container in the fridge until serving.
3. Boil the quail eggs for 2 to 3 minutes and let them cool in ice water for 1 minute. Remove the shells and arrange them in toothpicks with the cherry tomatoes.
4. Arrange the salami, prosciutto and cheese around the plate.
5. Place the olives in the center.
6. Serve with good toasted sour dough bread drizzled with olive oil.
