Ingredients:
ingredients
1 pkg. ( 15-oz ) refrigerated all-ready piecrust
2 lb. wheel brie cheese, about 8 inches in diameter
2 apples, cored and sliced
1 cup seedless green grapes
1/2 pint raspberries
1 cup apple juice
1 tbs. cornstarch
all-purpose flour as needed
Directions:
1. 1)preheat oven to 400F. On a large baking sheet, unfold one piecrust. Place Brie in center of piecrust. Turn under edge of piecrust to within 1/2 -inch of cheese and decoratively flute edge. Remove Brie and set aside.
2. 2)Prick piecrust with fork to prevent pastry from puffing while it is baking. Place baking sheet on center rack of oven and bake piecrust for 10 minutes; remove from oven. Lightly flour a wooden board, marble slab or other working surface.
3. 3)Unfold the second piecrust and place on floured board. With tip of a paring knife, cut four 2-inch-long oval-shaped leaves; mark veins on leaves with back of the knife. Place leaves on a baking sheet; bake 5 minutes or until golden brown. Transfer to a wire rack to cool.
4. 4)Lower oven temperature to 350F. Place Brie on fluted piecrust. Arrange apple slices around the top edge of cheese; place grapes and raspberries in the center. Return
5. fruit-topped Brie to oven and bake 10 minutes.
6. 5)Meanwhile, in a small saucepan, blend apple juice and cornstarch. Bring to boiling over moderately high heat and cook, stirring constantly, for 1 minute or until mixture is clear and thick. Remove saucepan from heat.
7. 6)Remove Brie from oven and arrange pastry leaves on top. Brush leaves and fruit with apple juice glaze. Allow to stand 15 minutes, until cheese softens. Carefully transfer to a serving board. Cut into wedges to serve. Makes 24 wedges.
