Fabulous Mint Tea

Mint is a great herb that you can grow at home and have ready when you need it... It needs little water and grows like a weed (in fact, it is). Just get some fresh mint at the market, clip the ends of the stems, and place them in an opaque cup with some water (water submerging the stem, not the leaves on the top) until it begins to grow roots (4-5 days, changing water every day or 2). When roots are long enough, place in soil. You'll soon have plenty of mint!
Ingredients:
4 cups boiling water, divided
12 -18 sprigs fresh mint, washed
4 tea bags
1/2 cup fresh lemon juice
1 cup sugar
1 quart cold water
ice
mint (to garnish) (optional)
Directions:
1. In large heatproof jar or pitcher, pour 2 cups boiling water over mint and tea bags. Steep 30 minutes.
2. In another container, pour 2 cups boiling water over lemon juice and sugar. Cool and add to tea mixture.
3. Stir, strain into serving picture with enough room to add cold water and ice before serving. Garnish with additional mint.
