This fun, rich appetizer combines three musts for every party tray...fruit, cheese, and nuts! These are best eaten right away, as the nuts will lose their crunch if they sit too long. Perfect bite size bit of yumminess with a nice glass of wine.
Ingredients:
1 large pear(or apple) peeled, sliced and cubed in no larger than 1/2 inch pieces
6-8oz soft goat's cheese(keep cold until ready to use)
about 1/4 cup roasted and salted pistachios, pecans, cashews or almonds, coarsely ground in food processor.
Directions:
1. Cut all the fruit into similar sized pieces. See Photo
2. Working with the cold cheese, form a bit of cheese around each fruit piece, covering completely, but try not to make a thick layer. See Photo
3. Finish all pieces of fruit before moving on to the next step, because covering with the cheese will prevent any browning of the fruit, and, it will also mean less time they will sit with the nut covering. :)
4. Place ground nuts in small, shallow dish and roll each cheese covered fruit in nuts.
5. Serve immediately.
