I had a taste for tamales one night but didn't want them fixed as usual , that was just boring to me. I thought about what I could do with the ones I had and came up with this. Fast, easy, and so tasty good! Just serve them up with your favorite taco toppin's and you are ready to go! You don't have to cook them for a certain amount of time either before they are safe to eat. This recipe would be so-so easy to double or triple. I would do this in the oven though, they may dry out.
Ingredients:
1 (24 ounce) box frozen tamales, in corn husks
1 (10 ounce) can rotel tomatoes, any flavor
2 tablespoons lime juice
Directions:
1. Remove each tamale from the husk and put in bottom of a craock pot.
2. Pour the can of tomatoes over the top.
3. Drip the lime juicve over the tomatoes.
4. Cover and heat on the keep warm setting until 10 to 15 minutes before you are ready to serve.
5. Time will depend on when you put them on.
6. Carefully remove each one to serving plates.
7. Top with your favorite Mexican food toppin's and enjoy.
8. Serve with salad too.
9. Note:.
10. If you can find the Ro-Tel tomatoes that all ready has the lime juice in it, that would be great too. I just couldn't find them.
11. Use more or less lime juice according to your taste.
