Extra Healthy Cauliflower Mash

Great mashed potato substitute. Alternate ideas: add cooked bacon, green onion and shredded cheese when baking.
Ingredients:
1 head cauliflower, separated into florets
1/2 cup milk
2 garlic cloves, minced
8 g glucomannan (fiber powder)
salt and pepper, to taste
Directions:
1. Preheat oven to 300°F.
2. Steam cauliflower for 10 minutes, until soft enough to easily pierce with a fork. Remove from heat & transfer to a food processor or blender. Process until smooth. Add milk, garlic, salt and pepper.
3. Pour into 1-1/2 quart baking dish. Bake for 10 min., until top is slightly browned.
