Extra Crispy Fried Chicken

It's Finger Lickin Good :) This is a copycat recipe for one of my fav food ever...the recipe also included Potassium Chloride for the marinade but I'm skipping it coz it kinda reminded me of a chemistry lab. I've made a few changes to make it extra crispy.
Ingredients:
1 whole chicken, cut up
about 2 liters of shortening or vegetable/peanut oil (for cooking)
1 egg, well beaten
250 ml buttermilk
2 1/2 cups cornflakes crushed
2 1/2 teaspoon of salt
3/4 teaspoon pepper
3/4 teaspoon of mono sodium glutamate (optional)
1/8 teaspoon paprika
1/8 teaspoon garlic powder
1 tablespoon mixed dried herbs
1/8 teaspoon baking powder
for marinating
2 tablespoons salt
4 tablespoons mono sodium glutamate (optional)
1/8 tablespoon garlic powder
1/3 cup of chicken base and
5 cups water
Directions:
1. Mix together ingredients for marinate and chicken for 24 hours in the refrigerator.
2. Preheat the shortening/vegetable or peanut oil in a deep-fryer to 365 degrees F.
3. Mix the beaten egg and buttermilk in a medium bowl blend it nicely. In another medium bowl, add the remaining coating ingredients like cornflakes, salt, pepper and mono sodium glutamate.
4. Transfer each piece of the marinated chicken to paper towels so that excess liquid can drain off from the chicken pieces.
5. Take one piece of chicken at a time, first dip in egg and buttermilk mix then coat the chicken with the dry cornflakes mixture, then the egg and milk mixture again, and then back into the cornflakes. Make sure that each piece is coated generously. Keep aside the chicken pieces on a plate until each piece has been nicely coated.
6. Now drop the coated chicken pieces, one piece at a time into the hot shortening. Fry 4 pieces of the chicken pieces at a time for 12-15 minutes, or until it is golden brown.
7. Occasionally stir the pieces to fry them evenly, after frying the pieces transfer them to paper towels to drain for about 5 minutes.
8. P.S.: For a healthier version...Preheat oven to 350 F...Space chicken evenly on greased baking tray. Cover with Aluminium foil and bake for 40 mins. Remove foil and bake for another 30 mins.
