Serve this exotic mix of fruit with ice cream or creme fraiche. Ingredients:
2/3 cup orange juice |
1 cinnamon stick |
1 vanilla pod |
6 cardamom pods |
1 teaspoon sugar |
2 tablespoons grand marnier |
1/2 teaspoon arrowroot |
8 ounces melon, cubed |
1/2 small ripe mango, cubed |
2 passion fruit, flesh scooped out |
2 kiwi fruits, cubed |
2 ounces fresh blueberries |
Directions:
1. Place the orange juice in a saucepan with the spices, sugar and Grand Marnier. Bring to the boil and simmer gently for 5 minutes. 2. Blend the arrowroot with 1 tsp water and add to the pan. Bring to the boil, stirring until thickened. Allow to cool before removing the whole Spices. Stir in the fruit. 3. Serve chilled with creme fraiche. The remaining fruit salad will keep for 1-2 days in the fridge. |
