Ever wonder what to do with left overs? Well with this recipe you will never have to wonder again. This will work with anything you have left over from dinner lunch or breakfast. Try it and you will love it!!
Ingredients:
* if you do not have a lot of leftovers, use your judment on the ingridients, a little less rice or margarine ect.
2 cups of white rice cooked (see my recipe for fast rice)
1 cup of frozen vegetables peas-corn-beans-broccoli ( use the ones that are cut small)
1 tbsp of margarine / one of olive oil
2 green onions chopped into small pieces
2 tbsp of soya sauce
2 scramble eggs
and now for the best ingredient your leftover’s = you can use, any leftover bbq, chicken, hot dogs, burgers, turkey, breakfast sausages, bacon, you get the idea
Directions:
1. Cut up your leftovers into small bite size pieces
2. make two scramble eggs and put aside
3. In a large skillet heat the margarine and oil
4. once the margarine is melted add the onions and vegetables cook for 2 minutes
5. add your left over cook one minute stirring to coat with oil
6. add the rice
7. pour the Soya sauce over the ingredients make sure the color is even and that all the rice is covered with the Soya sauce
8. stir to ensure it is all heated through
9. add scramble eggs stir and serve.
