This one has a bit of everything I like in a cookie-chocolate, oats, nuts and coconut. A friend of mine gave me a recipe for them, but I made some changes. I find that when you cut sugar, you can actually taste the other ingredients better. I also increased the coconut and oats.
Ingredients:
1/2 lb salted butter
1/2 cup brown sugar
1/2 cup sugar
2 eggs
1 1/2 teaspoons vanilla
2 1/4 cups flour
1 teaspoon salt
1 teaspoon baking soda
1/2 cup chopped walnuts
1 cup rolled oats
1 cup coconut
1 cup chocolate chips
Directions:
1. Cream butter and sugar.
2. Add eggs and vanilla.
3. Beat until fluffy.
4. Mix flour, salt, baking soda.
5. Add to sugar mixture.
6. Add in rolled oats.
7. Add in walnuts and coconut.
8. Stir in chocolate chips.
9. (For a crisper outside and softer inside you can refrigerate dough for one hour.).
10. Drop in ping pong size balls. (rounded teaspoons are fine, but the larger ball seems to work better-plus, less scooping!).
11. Bake in preheated oven at 375 for 8 to 10 minutes.
