I found the recipe that I based this one on in a book called monster cookies. I made a few changes to it and it has become mine. Everytime I make these they rarely last the day. They are actually quite healthy and filling and I will have one with my morning coffee for breakfast... kinda like a granola bar in cookie form. If you use a dark (non-stick) cooie sheet they will come out less chewy.
Ingredients:
1 cup butter or 1 cup margarine
1 cup granulated sugar
1 cup brown sugar (firmly packed)
2 eggs
1 teaspoon vanilla
1 cup all-purpose flour
1 cup whole wheat flour
1 teaspoon baking soda
1/2 teaspoon baking powder
1/2 teaspoon salt (optional)
2 cups oatmeal
2 cups corn flakes
1/2 cup coconut
1/2 cup chopped nuts (pecans or walnuts work best)
1/2 cup raisins
1 cup chocolate chips
Directions:
1. Pre-heat oven to 350 degrees F.
2. Cream butter and sugars until creamy.
3. Add eggs and vanilla, beat well.
4. Combine flours baking soda, baking powder and salt, then add to wet ingredients.
5. Stir in rest of ingredients and mix well.
6. Drop by heaping tablespoonfuls on ungreased cookie sheet.
7. Bake 10- 12 minutes or until lightly browned.
8. Allow to cool 1 minute on cookie sheet before removing to wire rack.
9. Store covered tightly.
