Everything But The Kitchen Sink Slaw

I came up with this recipe while trying to find nourishing dishes my husband can eat. The ingredients are what he likes; you can use just about any vegetables and/or fruits that you want. You can also add cooked pasta. Read more . Enjoy!
Ingredients:
1 cucumber
1 zucchini
1 apple, cored
carrots
sunflower seeds
1 can sliced olives
1 can pineapple tidbits
celery
red cabbage
a large bowl (this makes a *lot* of slaw)
Directions:
1. Shred cucumber, zucchini, apple and carrots with a food processor (I suppose you could do it by hand, but it would take forever), combine in a large bowl and toss to mix.
2. Add sunflower seeds, olives and pineapple, and mix.
3. Slice celery and cabbage, add to the bowl and mix everything together.
