My mom makes the BEST carrot cake on the planet!!! You've gotta try it!
Ingredients:
2 cups sugar
2 cups flour
2 teaspoons baking soda
2 teaspoons cinnamon
1 teaspoon salt
1 cup oil
4 eggs
3 cups carrots, grated
8 ounces cream cheese, room temperature
1/2 cup butter, room temperature
1 lb confectioners' sugar
1 cup walnuts, chopped
2 teaspoons vanilla extract
Directions:
1. Preheat oven to 350 degrees.
2. In a bowl combine sugar, flour, baking soda, cinnamon and salt.
3. Add oil and stir.
4. While stirring, add one egg at a time.
5. Pour mixture into two separate 9 inch round baking pans.
6. Bake for 25 minutes.
7. In another bowl, combine cream cheese, butter, confectionate sugar, nuts and vanilla until smooth.
8. When cake is done baking, and has cooled, cover with frosting and eat it all gone!
