Ever So Slightly Sweet Potato Cashew Bake

It's never too soon to be thinking about your Thanksgiving feast! I modified this Better Homes and Gardens New Cookbook recipe to suit my particular tastes. I hope you enjoy it. (For inquiring minds, the original recipe includes 1/2 cup packed brown sugar and 1 can of peach slices, drained. Read more ...too sweet for me)
Ingredients:
6 medium sweet potatoes
2 tablespoons brown sugar mixed with 1 teaspoon ground ginger
4 tablespoons butter (use the real thing, please!)
1/2 cup broken cashews
kosher salt
Directions:
1. Scrub and peel sweet potatoes, then cut into chunks.
2. Place sweet potatoes in pot and cover with water.
3. Parboil until just tender (approximately 15 minutes)
4. Remove from heat and drain.
5. Layer sweet potatoes in a greased casserole dish.
6. Dot with butter.
7. Sprinkle with brown sugar-ginger mix.
8. Add a pinch of kosher salt.
9. Dust lightly with my Signature Spice Blend (optional)
10. Bake, in a 350 oven, covered for about 20 minutes.
11. Uncover and sprinkle with cashew pieces.
12. Return to oven and continue baking, uncovered, for another 10 minutes.
13. Serve as a side with your traditional holiday meal.
