E's Famous Hummus

This hummus has been developed by trial and error and is the closest we've come to what we've had in restaurants.
Ingredients:
1 3/4 cup garbanzo beans
1 tbs extra virgin olive oil
1 clove garlic
1 1/2 tsp tahini
1 1/2 tsp salt
1 1/2 tsp black pepper
1/8 cup lemon juice
Directions:
1. Drain and rinse chickpeas
2. Add chickpeas, tahini, garlic, olive oil, salt, and pepper to food processor
3. Run food processor until the chickpeas are thoroughly chopped. This will take several minutes but will result in smoother hummus
4. Add juice from lemon and mix in
5. Add a little water and mix in
6. Continue to add water and mix until hummus is thin like a cake batter (the hummus will thicken up a bit in the fridge)
7. Add additional salt and pepper if the water dilutes the taste.
8. Makes about two cups of Hummus,serving size-2 tbsp.
