Erin's Vegan Corn Chowder

This corn chowder is easy and delicious. I have made it vegan, but you can easily add 1/2 cup of milk or cream. Add cayenne to taste.
Ingredients:
5 ears of corn (cut from cob,milk cob)
1 large potato
2 carrots
2 stalks celery
2 cloves of garlic
1 large onion
1 dash of cayenne pepper
1 dash of kosher salt
4 cups vegetable broth
Directions:
1. Saute carrots, onion, garlic and celery in olive oil. Be sure to add the celery leaves. Saute till soft.
2. Add corn and lightly saute, then add broth, diced potato, cayenne and salt.
3. Bring to boil, then cover and turn down to simmer for one hour.
4. Take 2 cups of soup and puree in blender, add back to soup. Stir well.
