Epicure's Stacked Turkey Tortilla Casserole

If you're tired of the typical leftover turkey dishes, you've gotta try this one! The recipe is from Epicure Selections so it calls for their product. You can substitute other product as you like, but the Guacamole Dip Mix from Epicure is definitely worth a try.
Ingredients:
1 (8 ounce) light cream cheese, spreadable container
2 cups cottage cheese, low-fat
1 tablespoon guacamole, epicure's dip mix seasoning
4 cups turkey, cooked & diced
2 teaspoons fajita seasoning mix, epicure's
2 tomatoes, diced
1 teaspoon garlic, minced
4 tortillas, large whole wheat or 4 flavoured tortillas
1 (8 ounce) can black beans, drained and rinsed
1 cup low-fat cheese, grated
1 cup tomato sauce
Directions:
1. Preheat oven to 400°F.
2. Stir cream cheese and cottage cheese with Guacamole Dip Mix.
3. Toss turkey with Fajita Seasoning. In a separate bowl, stir tomatoes with Minced Garlic. Spray bottom and inside ring of a round spring form pan with oil.
4. Spread 1 tortilla with 1/3 cheese mixture, then place into the spring form pan. Layer with 1/3 tomato mixture, 1/3 turkey mixture and 1/3 beans. Sprinkle with 1/4 cup cheese. Top with another tortilla and repeat layering. Last layer should be tortilla topped with remaining cheese.
5. Bake for 10-15 minutes until heated through and cheese is melted. For easier serving, let stand 15 minutes before cutting.
6. Cut into wedges and place on plates. Ladle Tomato Sauce overtop.
