An Easy, Healthy, Hardy Dinner. When I work out of town I cook this on Sunday night and pack it in Rubbermaid Containers and Cooler. It serves me three dinners.
Ingredients:
1 lb hamburger meat
1 1/2 lbs red potatoes
1 lb brown rice
1 (8 ounce) box jiffy corn muffin mix
2 eggs
1/3 cup milk
1/2 cup water
garlic powder
italian seasoning
1 (8 ounce) bottle ketchup
Directions:
1. Start Boiling your Brown Rice (takes about 30 min.).
2. Clean and Cut out bad spots from Red Potatoes and cut into chunks. (leave some skin for flavor).
3. Boil your Potatoes (About 15 min.).
4. Mix your Corn Muffin mix and bake (as directed) in an 8 round.
5. Brown you Hamburger Meat in pan on medium-high heat. Remove some grease.
6. Mash your potatoes and mix in Hamburger Meat, Garlic Powder and Italian Seasoning.
7. Drain rice (rice is a side dish).
8. When your Goulash is on your plate top it off with plenty of Ketchup.
9. Mix your Rice and Cornbread as desired.
