This is my cooking teacher, Manjuali's, recipe. Very refreshing! I don't use as much salt as she calls for, so you may want to add that to taste.
Ingredients:
2 cups mung bean sprouts
2 cups tomatoes, chopped
2 cups cucumbers, chopped
1/4 cup peanuts, crushed
1/4 cup flax seed
1/4 cup fresh frozen coconut, grated
1 cup golden raisin
2 tablespoons lime juice
1/4 teaspoon black salt
2 tablespoons salt
1/2 cup cilantro, chopped
1/4 cup sunflower seeds
Directions:
1. Mix all ingredients and serve chilled.
