I got this recipe from our local newspaper. You can really taste the bran in these, so if you aren't a fan, these may not be for you!
Ingredients:
1 cup bran flakes
1/4 cup wheat bran
1/4 cup wheat germ
1 1/2 teaspoons orange zest
1/4 cup orange juice
1 cup mixed dried fruit, chopped (i used apricots, dates, raisins and cranberries)
1 egg, beaten
1/4 cup vegetable oil
1/2 cup unsweetened applesauce
1/2 cup honey
1/3 cup powdered milk
3/4 cup whole wheat flour
3/4 cup all-purpose flour
1/4 teaspoon baking soda
Directions:
1. Preheat oven to 350°F.
2. Grease a 9x13 pan.
3. In a medium bowl, combine cereal, bran, wheat germ, orange peel, orange juice, dried fruit, egg, oil, applesauce, hone and dry milk powder; blend well.
4. Let stand 5 minutes.
5. In a large bowl, stir together whole wheat flour, all-purpose flour and baking soda.
6. Stir in the first mixture and blend until all ingredients are combined.
7. Spread batter evenly in prepared pan.
8. Bake 15 to 20 minutes or until golden.
9. Cool and cut into bars.
