Ingredients:
100 ml light vegetable bouillon
1 lemon
1 avocado
1 cucumber
2 spring onions
1/2 garlic clove
1/2 red pepper
100 g spinach
Directions:
1. Mash the avocado into the stock until it forms a thick and smooth consistency.
2. Squeeze in the juice from the lemon and throw in the rest of the ingredients.
3. This soup could be served hot or cold.
