Endive Spears with Stilton Cheese, Toasted Pecans and Sautéed Pears

Ingredients:
3 tablespoon(s) butter
2 tablespoon(s) sugar
2 pears peeled and diced
2 clove(s) garlic chopped
1 tablespoon(s) balsamic vinegar
1 teaspoon(s) salt check saltiness of cheese first
1 teaspoon(s) freshly ground black pepper
1/4 cup(s) extra virgin olive oil add slowly, less than 1/4 may be better
3/4 cup(s) stilton blue cheese crumbled
25 endive spears
1/2 cup(s) pecan halves or pieces toasted
1 cup(s) cream cheese for presentation
Directions:
1. In a large sauté pan, over medium heat, add the butter and sugar. Add the diced pears and cook until well caramelized, approx. 8 mins.
2. In a small bowl, whisk together the garlic, vinegar, salt, pepper and olive oil. Add mixture to the Stilton. Assemble the spears 1 by 1, starting with the blue cheese then the sautéed pear and topping off with a toasted pecan.
3. Arrange the spears on a plate by first making a small mound of cream cheese and then sticking each spear into the cream cheese in a floral, 3-dimensional pattern
