' End of Summer' Rice Salad With Tuna

Ingredients:
2 1/2 cups cold basmati rice or 2 1/2 cups white rice
1 (16 ounce) can garbanzo beans, drained and rinsed
3 roasted red peppers or 3 yellow bell peppers, chopped
1/2 cup chopped fresh basil
1/2 cup chopped red onion
2 garlic cloves, crushed
1/4 cup extra virgin olive oil
1/4 cup fresh lemon juice
1/2 teaspoon salt
1/2 cup crumbled feta cheese
8 ounces cooked fresh tuna, chunked
2 cups fresh baby spinach leaves
Directions:
1. Combine all ingredients in a bowl; toss well.
2. Let stand at least 1 hour.
3. Serve at room temperature.
