End Of Harvest Autumn Roasted Veggie Platter

Of course you may add any veggies and fruits you wish. Eggplant, grapes, apples and suit your spice to each individually.
Ingredients:
assorted veggies and fruits
sweet onion sliced into half moons
large green tomato sliced
red cherry tomatoes halved
yellow grape tomatoes halved
asian pear (pear-apple) sliced
2 baking potatoes and 2 sweet potatoes microwaved until 'almost' done
brown sugar
honey
olive oil
italian spice
cinnamon
walnuts
spices
Directions:
1. Preheat oven to 325F
2. Place foil on a baking sheet
3. rub a little olive oil over it just to moisten
4. Place veggies and fruits in rows in rows as in picture
5. scatter nuts and small tomatoes about
6. honey the fruits and nuts and sprinkle on cinnamon (just on them)
7. sprinke oil on all veggies
8. add brown sugar only on sweet taters
9. improvise with your spices
10. Roast for 20-25 minutes
11. Broil last 2-3 minutes
