a friend gave me this recipe many years ago and it is a great soup for casual get togethers served with warm tortillas or corn chips
Ingredients:
1-1/2pounds ground round
2 chopped onions
2 cans cheddar soup
1 can kidney beans
1 can mexican pinto beans
1can drained corn
1 can sliced black olives
1 large can tomato sauce
1 large can spanish tomato sauce
1large can enchilada sauce
2 cups grated cheddar cheese
crushed red pepper to taste
chopped chives
chopped green onion
sour cream
Directions:
1. In large pot, brown ground round and onions
2. Add the rest of ingredients except for chives, green onion and sour cream(these are optional garnishes). Simmer until bubbly
