Vegetarian spanish rice
Ingredients:
4 cups basmati rice, cooked
1 medium onion, chopped and saute until soft
2 cloves garlic, chopped and sauted
1 can rotel tomatoes & chilies
1 can chopped mild green chili (or you can use jalepeno if you are brave)
Directions:
1. Toss ingrediets with rice.
2. Add salt and pepper to taste if desired.
